Tarte au Citron

Préparation : 30 min.
Repos : 1 h.
Cuisson : 10 à 15 min.
Pour 4 à 6 personnes

Pour la pâte :

150 g de farine
15 à 20 cl d’eau,
40 g d’huile de coco
4 c. à soupe de cassonade,
1 pincée de fleur de sel
Pour le lemon curd :

3 citrons bio (environ 15 cl de jus),
50 g de fécule de maïs,
20 cl de boisson à l’avoine,
10 cl d’eau,
75 g de margarine,
250 g de sucre semoule

Préchauffez le four à 200 °C.

Réalisez la pâte :

Dans un saladier, mêlez la farine avec la cassonade et la fleur de sel.
Ajoutez l’huile de coco et travaillez la préparation avec vos doigts.
Versez l’eau petit à petit, en mélangeant, de façon à obtenir une pâte lisse et homogène.
Étalez la pâte sur le plan de travail fariné. Foncez un moule à tarte avec la pâte et piquez le fond à l’aide d’une fourchette.
Enfournez pour 10 à 15 min, jusqu’à ce que la pâte soit dorée et croustillante. Laissez refroidir.
Réalisez le lemon curd :

Râpez le zeste des citrons et recueillez leur jus.
Délayez la fécule de maïs avec l’eau dans un bol.
Dans une casserole, mélangez le sucre avec la boisson à l’avoine, le jus et le zeste de citron puis incorporez la fécule délayée. Faites cuire 5 min à feu doux, en fouettant régulièrement, jusqu’à ce que le mélange épaississe. Incorporez la margarine.
Versez le lemon curd sur le fond de tarte cuit. Lissez le dessus puis laissez refroidir.
Placez la tarte 1 h au réfrigérateur avant de servir.
